Salad sandwich

Last week I was in a bit of a lunch rut.  I had been eating homemade salads every day and was not doing too much mixing up of the toppings.  Well, a catered lunch left me with a slice of left-over bread so I decided to throw my salad into a sandwich.

I present to you: my salad sandwich!  This was made on a piece of panera’s french bread.  The lettuce was a spring mix with cucumbers, cherry tomatoes, slices of mini sweet peppers and leek pieces (just used a leek for the first time last week and I loved the flavor – similar to a scallion but not as strong).  The salad was topped off with a little bit of caesar salad dressing.  It was such a yummy sandwich!  Even though it was the same old salad I had been eating all week the bread made it taste refreshing new.
